Bloodwood honey is a premium, rich, and robust Australian honey derived from the nectar of Red Bloodwood trees (Corymbia gummifera). It is characterized by its deep amber colour, toasty caramel and golden syrup Flavors, and a smooth, creamy texture. Often harvested in late summer/autumn, it is a rare, complex, and highly prized honey.
Flavour Profile: Strong, full-bodied with a toasty caramel, resinous, or woody aftertaste.
Colour & Texture: Ranges from pale to medium-dark amber. It has a high density and is generally easy to spread.
Origin: Sourced from Red Bloodwood forests, mainly along the coast of New South Wales, Queensland, and Victoria.
Harvesting: The trees flower every two to four years, making it a limited-production "terroir" honey.
Best Uses: Its strong flavour pairs well with cheese (like Camembert), on toasted bread, or used to balance sweetness in desserts.
Nutritional Profile: High in carbohydrates (approx. 83g per 100g) and natural sugars, typically with a low moisture content.
