Bloodwood honey comes from Red Bloodwood trees (Corymbia gummifera) in coastal eastern Australia. These trees bloom only every two to four years, so it is never produced in large volumes. It is cold extracted, raw and unfiltered, keeping the natural enzymes, antioxidants and pollen. The result is a dark amber honey with golden syrup and toasted caramel flavours and a mellow woody finish.

Raw honey can crystallise naturally in cooler weather, which makes it harder to squeeze. With the cap closed, stand the bear in warm water (not hot or boiling) until it flows again. Avoid the microwave.
